Do you mean it won't IDLE w/o the choke on?

When bikes sit, small passageways in the carb circuitry can get clogged with gas varnish deposits. The part of the carb that controls the idle is the "pilot jet" which is a small brass item with a very small, hollow passageway. If it will idle with the choke on, but dies when the choke it turned off, chances are very good the pilot jets are clogged shut with debris or dried up fuel varnish.

I would suggest getting a factory manual with a good diagram of the carbs, so you can take them apart and examine/clean the pilot jets.
